In a frying pan over a medium to high heat, melt the butter. Rub the fillets in olive oil and season generously.
Place in the frying pan, skin side down and cover. Cook for 6 to 8 minutes. Check on the halibut, it should be about halfway cooked at this stage. To brown the top of the fillet, flip over and cook on the top for 3 to 4 minutes. Flip back onto the skin and cook until the fish is an even white colour throughout yet still moist and juicy. Remove from the pan and serve immediately.
If you are new to cooking fish, try to find fillets that are quite even in thickness as this will help you to not overcook the fish.
