Foolproof fruit cake

    This foolproof fruit cake is always a winner and lovely enjoyed sliced with a little butter or honey spread on top.

    Serves: 10 

    • 140g margarine
    • 110g brown sugar
    • 2 large eggs
    • 225g sultanas
    • 110g glace cherries, halved
    • 1/2 teaspoon vanilla extract
    • 1 tablespoon mixed peel
    • 225g self raising flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon mixed spice
    • 1/2 teaspoon ground nutmeg

    1. Preheat the oven to 170 C / Gas 3. Grease a 900g loaf tin and line with baking parchment.
    2. Cream together the margarine and sugar until light and fluffy. Add the eggs, one at a time and beat until well mixed. Add the sultanas, glace cherries, vanilla extract and mixed peel and stir to mix well.
    3. Into a separate bowl, sift the flour and add the bicarb, mixed spice and nutmeg. Add the dry to the wet ingredients and mix well. Transfer to the prepared loaf tin.
    4. Bake in the preheated oven for 60 to 90 minutes until firm to the touch and a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool in the tin for 2 hours before slicing and serving.
