Christmas rocky road

    To this seasonal variation of Rocky Road, I add gingerbread, nuts, cranberries, clementine zest and cinnamon. You can also use up the last of your Christmas cake. But the best thing about Rocky Road? You can add what you like, and leave out what you don't.

    Serves: 6 

    • 2 tablespoons butter
    • 300g milk or dark chocolate
    • 2 tablespoons golden syrup
    • 150g biscuits (gingerbread, amaretti, or gingernuts), crumbled
    • 100g mini marshmallows
    • 50g dried cranberries
    • 50g glace cherries
    • 75g roughly chopped nuts (I prefer brazil nuts)
    • 1 clementine, zested
    • For dusting
    • 1 tablespoon icing sugar
    • 1/2 teaspoon cinnamon

    1. Melt the butter, chocolate and golden syrup together.
    2. Add in all the dry ingredients, and stir to coat.
    3. Pour into a tray, and place in the fridge for 1 to 2 hours to chill and firm.
    4. Cut into 2.5cm (1 in) squares. Dust with the mix of icing sugar and cinnamon.


    This is also a great way to use up any leftover Christmas Cake, just crumble up your cake instead of the dried fruit and nuts, and voila!
