Christmas Rocky Road

    A seasonal variation on Rocky Road, I add cinnamon, nuts, cranberries, clementine and gingerbread. Or use up the last of your Christmas Cake. But the best thing about Rocky Road? Add what you like, and leave out what you don't!

    • 150gr biscuits (I use gingerbread, but Amaretti or gingernuts work too)
    • 300gr chocolate (2 large bars) - milk or dark, your preference
    • 2 tbsp butter
    • 2 tbsp golden syrup
    • 100gr mini marshmallows
    • 1 handful dried cranberries (~50gr)
    • 1 handful glace cherries (~50gr)
    • 1 handful nuts, roughly chopped (I prefer brazil nuts)
    • Finely grated rind of one clementine
    • 1 tbsp icing sugar & 1/2 tsp cinnamon to dust


    1. Melt the butter, chocolate and golden syrup together.
    2. Add in all the dry ingredients, and stir to coat. (Grating your clementine - make sure you only get the orange skin and not the white pithe underneath, or it will be bitter!)
    3. Pour into a tray, and place in the fridge for 1-2 hours to chill & firm.
    4. Cut into 1 inch squares, and dust with the mix of icing sugar & cinnamon.


    This is also a great way to use up any leftover Christmas Cake, just crumble up your cake instead of the dried fruit and nuts, and voila!
