50gr pistachio (or other nuts, your choice), roughly chopped

Finely grated rind 1 clementine
1 tbsp brown sugar, pinch nutmeg

Heat oven 180C.
Roll out puff pastry to around 3mm thickness. Spread over jar of cranberry sauce. Dot on jar of mincemeat. Sprinkle over nuts and clementine rind. Roll up pastry, then cut into pinwheels. Sprinkle over brown sugar & nutmeg.
Place on a grease proof tray, and bake 18-20 mins until golden brown, and puffed. Once out of the oven, leave on tray for 8-10 mins to cool, before removing.
