Christmas mincemeat roulade

    A quick and easy homemade alternative to mince pies, which look fabulous and taste great!

    Serves: 16 

    • 1 pack puff pastry
    • 1 jar cranberry sauce
    • 1 jar mincemeat
    • 50g pistachios (or other nuts), roughly chopped
    • zest of 1 clementine
    • 1 tablespoon soft brown sugar
    • 1 pinch ground nutmeg

    1. Heat oven to 180 C / Gas 4. Line baking tray with parchment.
    2. Roll out puff pastry to around 3mm thickness. Spread over jar of cranberry sauce. Dot on jar of mincemeat. Sprinkle over nuts and clementine rind. Roll up pastry, then cut into pinwheels. Place on prepared tray. Sprinkle over brown sugar and nutmeg.
    3. Bake 18 to 20 minutes until golden brown and puffed. Once out of the oven, leave on tray for 8 to 10 minutes to cool before removing.
