Christmas Fruit Brack

    Lighter than Christmas Cake, this is a lovely fruit load or brack. And it's fat-free!

    • 200 gr plain flour
    • 50 gr ground almonds
    • 350 gr dried fruit (date, figs, cranberries, glace cherries, sultanas etc)
    • 250 ml cold tea
    • 75 gr brown sugar
    • 1 egg
    • 2tsp baking powder
    • Grated zest of 1 clementine
    • Topping: 1 tbsp brown sugar & pinch favourite spices (nutmeg, cinnamon, ginger)


    1. Steep 1 teabag in 250ml boiling water. Remove teabag and add dried fruits. Leave for 2 hours, or overnight.
    2. Heat oven 170C
    3. Add the dry ingredients to the tea & fruit mix. Beat the egg and mix in. Pour into a loaf tin. Sprinkle tbsp brown sugar & spices on top.
    4. Bake for 55-60 mins, until a skewer/knife comes out clean. remove from oven, and allow to cool. Serve on it;s own or with a scraping of butter for the perfect afternoon treat!
