About this recipe: Delicious fluffy and super easy cupcakes

  • 110g butter
  • 110g caster sugar
  • 110g self raising flour
  • 2 tbsp fresh milk
  • 1 pinch of baking soda or bicarbonate of soda
  • 1 tsp vanilla extract
  • 2 eggs, lightly beaten


  1. Preheat the oven to 180c and make sure you have a baking tray at hand.
  2. Mix the butter, flour and sugar together using any method. rubbing the flour and butter or creaming the butter and sugar. I prefer rubbing, but make sure you mix in the other ingredient afterwards.
  3. Add your baking powder, eggs and vanilla. Add 2 tbsp of milk to get it to a smooth mix.
  4. Pour the mix into cupcake cases on the tray in tablespoons. Leave in the oven for fifteen minutes, test by poking in a toothpick. If any dough sticks to it, leave it in for five minute intervals.
  5. Decorate with icing and enjoy!


Sieving the flour will give you a smoother mix.
