About this recipe: Melt in the mouth lemony squares. Makes about 16.

  • 400gm Can of condensed milk
  • Rind and juice of 1 lemon
  • 150gm butter
  • 150gm caster sugar
  • 175gm plain flour
  • 125gm porridge oats
  • 1 teaspoon baking powder
  • pinch of salt


  1. Preheat oven to gas mark 4 / 180°C / 350°F
  2. Lightly grease a 10 x 8 tin and line base with baking sheet
  3. Beat together the condensed mil, lemon rind and juice until smooth - set aside
  4. Cream the butter and sugar until light and fluffy
  5. Using a fork fold in the flour, oats, baking powder and salt until the mixture looks like coarse crumbs
  6. Press half the oat mixture evenly into the base of the tin
  7. Pour over the condensed milk mixture and level out
  8. Sprinkle over the remaining oat mixture
  9. Bake for 35 - 40 minutes until firm and golden
  10. Cut into squares while warm and leave in the tin until cold before removing

I used half the recipe to try. It taste lovely...I was licking clean the butter knife which I used to cut aft baking. However, it didn't keep its square shape like shown in the photo. Instead it ended up a crumbled mess. I am not sure wat went wrong...guess I juz haf to use a spoon n bowl to eat it. - 19 Feb 2014
