Fry the onion in oil for 5 mins in a large saucepan or stock pot. Add all other ingredients and then pour over a pint and a half of the chicken stock and bring to the boil. Simmer for approximately 40 mins. If the mixture is too thick simply add more water-adjust to taste. Either leave as a chunky soup or hand blend it for a smoother finish! Simples.
Serve with chunky crusty bread. Go easy on the salt as the stock cubes have a lot of salt in.
