Classic basic cupcakes

    This is the cupcake recipe I always stick by. It comes out, for me, perfect every time and it's really easy! Great for parties, special occasions, friends coming over and a family treat.

    Makes: 1 dozen cupcakes

    • 100g caster sugar
    • 100g butter or margarine, softened
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 100g self raising flour
    • 1 teaspoon baking powder

    1. Pre heat the oven to 180 C / Gas 4. Line a tray with 12 paper cases.
    2. Put the sugar and butter in the bowl mix together, then add beaten egg and vanilla. Mix until combined.
    3. Next sift in the flour and baking powder, mix again until light mixture that has a dropping consistency forms. Plop a tablespoon full in each case.
    4. Pop in the oven 15 to 20 minutes, or till golden. Take out and leave for 10 to 15 minutes to cool.


    If you want to put icing on, make sure you do it after you've let them cool.
