Easy ragu pasta sauce

    This is an easy ragu sauce I use for everything - lasagne, cannelloni or just over a bowl of spaghetti. My Italian friend even gives it his seal of approval, so it can't be bad!

    Serves: 4 

    • 2 large onions, peeled and chopped
    • 4 cloves of garlic, chopped or crushed
    • olive oil for frying
    • 450g (1 lb) beef mince
    • 225g (1/2 lb) minced pork
    • 1 to 2 glasses red wine
    • 2 1/2 (400g) tins chopped tomatoes
    • 1 bay leaf
    • salt and pepper to taste

    1. Sweat onion and garlic in pan with olive oil until softened. Don't brown.
    2. Once softened add meat, brown and drain away fat.
    3. Add the red wine, reduce until you can no longer smell the alcohol.
    4. Add tomato, add bay leaf and seasoning to taste, then reduce heat and simmer for one hour, until sauce thickens.
