Lazy tasty chilli

    Really quick and simple, yet delicious chilli recipe. Use the traditional beef mince, or make it with any other type or combination of mince, from chicken to sausagemeat.

    Serves: 6 

    • 2 tablespoons olive oil
    • 2 red onions, chopped
    • 2 cloves garlic, chopped
    • 600g beef mince
    • 1 heaped tablespoon chilli flakes
    • 1 heaped tablespoon salt
    • 1kg passata
    • 500ml water
    • 1 beef stockpot
    • 400g tin kidney beans
    • 400g tin pinto beans
    • 2 heaped tablespoons ground cumin
    • 1 teaspoon sugar

    1. Fry onions and garlic in the oil till soft. Add mince and brown well. Season with salt and chilli flakes, then pour in the passata and bring to the boil.
    2. Add water and beef stockpot, and bring back to the boil, stirring constantly. Add the beans, sugar and the cumin, bring to the boil, reduce heat and simmer.
    3. Allow the chilli to reduce down until you have a thick consistency with about 1cm of liquid on the top. Serve!
