    About this recipe: My daughter goes crazy for egg in a bowl. It is simply a couple of boiled eggs and buttered toast chopped up into bite sized pieces and tossed together - delicious!

    Ingredients
    Serves: 1 

    • 2 eggs
    • 2 slices thick bread
    • 2 tablespoons butter
    • salt and pepper, to taste
    • chopped fresh chives

    Method

    1. Place the eggs in a saucepan of cold water and bring to the boil. As soon as the water begins to boil, lower the heat to a simmer and cook for 8 minutes.
    2. Meanwhile, just before the eggs are done, toast the bread and spread the butter evenly. Chop the bread into bite size squares and place in a warmed bowl. Remove the eggs from the water and break the shells. Chop the eggs roughly and add to the bowl along with the toast. Toss together, season and garnish with chopped fresh chives. Serve immediately and eat with a spoon!

    Doesn't get much simpler than this. I used butter and garlic croutons in place of the toast. Tastes great with Sriracha hot sauce on top. - 02 Feb 2015
