Homemade mato (Catalan cheese)

    • 1L fresh full fat milk
    • 1 lemon, juiced

    1. Heat the milk until it starts to boil.
    2. Slowly add the lemon juice until the milk 'breaks'. Sometimes a few drops is enough, sometimes more is needed. Mix with a fork and remove it from the cooker.
    3. Pour the milk through a double fine mesh strainer to separate the cheese and the water. Don't press the mix, let it strain by itself. Serve and enjoy.
