Homemade Mato (Catalan cheese)

    A fresh cheese recipe, delicious with honey or sugar as a dessert or for breakfast.

    • 1 lemon
    • 1 litter of fresh milk (full fat)


    1. Squeeze the juice of the lemon and keep it in a glass
    2. Heat the milk until it starts to boil
    3. Slowly add the lemon juice until the milk 'breaks'. Sometimes a few drops is enough, sometimes more is needed. Mix with a fork and remove it from the cooker.
    4. Pour the milk through a double fine mesh strainer to separate the cheese and the water. Don't press the mix, let it strain by itself.
    5. Serve and enjoy!
