Cranberry and Stilton muffins

    Cheese and fruit is a classic combination, and I love this combination of sweet and savoury in these muffins. Simple to make, and great hot straight from the oven, or as a cold snack.

    Makes: 12 muffins

    • 300g self raising flour
    • 80g butter or margarine
    • 150g Stilton cheese, crumbled
    • 100gr dried cranberries
    • 1 egg, beaten
    • 250ml milk
    • 1 teaspoon prepared mustard

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Heat oven to 200 C / Gas 6. Grease or line muffin tin.
    2. Rub the butter into the flour. Add Stilton and dried cranberries, then mix in egg, milk and mustard. Spoon into muffin cases, filling each 3/4 full.
    3. Bake 18 to 20 minutes, or until golden brown.
