Stilton and bacon wrapped chicken

    Great flavours, easy to make, always impresses! Mix dried cranberries, walnuts or dates into the Stilton mix for a change!

    Serves: 4 

    • 4 chicken breast fillets
    • 100g crumbled Stilton cheese
    • 1 pack streaky bacon

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Heat oven to 180 C / Gas 4.
    2. Cut a slit in the side of the chicken breasts to create a pocket of space and stuff with Stilton. Wrap the chicken with strips of streaky bacon (will usually use 3 to 4 slices per breast). Wrap tightly with foil, and place in an ovenproof dish.
    3. Bake for 20 minutes, then carefully remove the foil and return to the oven. Increase heat to 200 C / Gas 6 and bake for further 10 to 12 minutes until bacon is crispy.

    Very tasty, and quick and easy to prepare. Cooked for 10 mins longer than recommended as bacon didn't crisp up but probably because I accidentally wrapped a double layer of bacon around each chicken breast.  -  04 Jan 2016
