Heat oven to 180 C / Gas 4.
Cut a slit in the side of the chicken breasts to create a pocket of space and stuff with Stilton. Wrap the chicken with strips of streaky bacon (will usually use 3 to 4 slices per breast). Wrap tightly with foil, and place in an ovenproof dish.
Bake for 20 minutes, then carefully remove the foil and return to the oven. Increase heat to 200 C / Gas 6 and bake for further 10 to 12 minutes until bacon is crispy.
