Banana and pecan muffins

    Delicious! So easy to make great for a lazy Sunday brunch they keep well for a few days though they don't hang around for long! Can also add chocolate chips instead of pecans.

    Makes: 12 muffins

    • 3 medium bananas, the riper the better (300g skin off weight)
    • 150ml vegetable oil
    • 2 teaspoons vanilla extract
    • 2 large eggs
    • 150g caster sugar
    • 50g chopped pecans
    • 175g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 4 teaspoons instant espresso coffee

    1. Preheat oven to 200 C / Gas 6. Line 12 muffin holes with paper cases.
    2. Mash bananas. Add vanilla extract. Beat in oil. Beat in eggs one at a time. Stir in sugar.
    3. In a separate bowl, mix flour with bicarb and espresso, then beat into banana mixture. Stir in pecans. Spoon into muffin cases.
    4. Bake for 20 minutes.
