Mix flour and salt together. Add the eggs, start whisking then start adding the milk. Once smooth, add the orange juice and 2/3 of the apple juice.
Coat a small frying pan with a little butter or oil. Heat over medium high. Add the pancake batter. Once the pancake has bubbles on the surface, sprinkle with sugar to taste, then flip and cook for a further 30 seconds. Remove from pan and keep warm. Repeat with remaining batter.
Garnish each warm pancake with lime slices and orange segments. Sprinkle each with a little of the remaining apple juice. Hope you enjoy!
