Cucumber and mint raita

    This minty cucumber raita is so easy to make and is a superb accompaniment to curries, or to have with poppadoms.

    Ingredients
    Serves: 1 

    • 150ml full fat yoghurt
    • 5cm piece cucumber - peeled, deseeded and finely chopped
    • 1/8 teaspoon salt
    • 1 rounded tablespoon mint sauce

    1. Mix all ingredients together... That's it! Add a teaspoon of smooth mango chutney if you've got it and can be bothered!
