About this recipe: This eggless cake is delightful sliced and served with butter. The spices are optional but add a lovely flavour.

Makes: 1 date loaf cake

  • 200g pitted dates, chopped
  • 125g dark brown sugar
  • 35g margarine
  • 125ml boiling water
  • 190g self raising flour
  • 1 teaspoon bicarbonate of soda
  • 2 teaspoons vanilla extract
  • 1 teaspoon mixed spice
  • 1/2 teaspoon ground nutmeg

  1. Preheat the oven to 200 C / Gas 6. Grease and flour a 900g (2 lb) loaf tin.
  2. Combine chopped dates, sugar, margarine and boiling water. Let stand 15 minutes.
  3. Stir in flour, bicarb and vanilla and spices. Pour into prepared tin.
  4. Bake in the preheated oven for 30 to 45 minutes, or until a skewer comes out clean when inserted in the centre. Allow to cool before turning out and serving.
