Tuna and mushroom pasta bake

    50 min

A nice, cheap, store-cupboard dinner. I tend to serve this with a salad and maybe some garlic bread. Thanks to ruthymunchkin for the photo.

    Serves: 4

    • 150g mushrooms, sliced
    • 1 onion, finely chopped
    • 1 knob butter
    • 1 tablespoon plain flour
    • 300ml milk
    • 150g frozen peas and sweetcorn
    • 1 (200g) tin tuna, drained
    • 100g cheese, grated
    • 250g pasta, cooked and drained

    Prep:20min  ›  Cook:30min  ›  Ready in:50min

    1. Preheat the oven to 200 C / Gas 6.
    2. Gently fry the mushrooms and onion in the butter. Stir in the flour and cook for a minute.
    3. Slowly stir in the milk, then add the peas and sweetcorn. Simmer for a few minutes, stirring to thicken.
    4. Stir in the tuna and half of the cheese. Mix the sauce into the pasta and tip into an ovenproof dish. Cover with the remaining cheese.
    5. Bake in the preheated oven for 20 to 30 minutes, until the top is golden.

I sometimes mix a packet of crushed ready salted crisps with the cheese to go on top (you may not need all of the bag). This adds a nice crunch to the top.

I added red pepper and sweet corn to this. It was scrumptious. Xx  -  18 Jul 2015

delicious! Just added a teaspoon and a half of lazy garlic and served with a crip salad. Yummy. Next time I'll try some different veg with the peas, I'll definitely be cooking this again!  -  04 Jan 2018

Was tasty. I used a red pepper in place of the mushrooms. It was nice because of all the colour. Am definitely saving this to make again  -  21 Mar 2014
