This vegetarian mincemeat recipe is perfect for filling mince pies, mincemeat tarts and other Christmas baking creations. This recipe uses vegetarian suet and has a nice balance of fruits, spices and brandy.

Ingredients
Makes: 3 (450ml) jars vegetarian mincemeat
- 175g sultanas
- 150g raisins
- 150g dried cranberries
- 100ml brandy
- 150g candied peel
- juice and zest of 1 lemon
- 200g apples - peeled, cored and chopped
- 150g brown sugar
- 1 teaspoon mixed spice
- 200g vegetarian suet
- juice and zest of 1/2 orange

- Soak the dried fruit in the brandy overnight.
- The next day, combine the dried fruit and brandy with the remainder of the ingredients and mix well until blended.
- Transfer the mixture into sterilised jars and seal. Store in the fridge or in a cool dark place for up to 6 months.
