Vegetarian mincemeat

    This vegetarian mincemeat recipe is perfect for filling mince pies, mincemeat tarts and other Christmas baking creations. This recipe uses vegetarian suet and has a nice balance of fruits, spices and brandy.

    Makes: 3 (450ml) jars vegetarian mincemeat

    • 175g sultanas
    • 150g raisins
    • 150g dried cranberries
    • 100ml brandy
    • 150g candied peel
    • juice and zest of 1 lemon
    • 200g apples - peeled, cored and chopped
    • 150g brown sugar
    • 1 teaspoon mixed spice
    • 200g vegetarian suet
    • juice and zest of 1/2 orange

    1. Soak the dried fruit in the brandy overnight.
    2. The next day, combine the dried fruit and brandy with the remainder of the ingredients and mix well until blended.
    3. Transfer the mixture into sterilised jars and seal. Store in the fridge or in a cool dark place for up to 6 months.
