Ingredients
Makes: 8 (225g) jars mincemeat
250g dried apricots, chopped
250g dried cranberries, chopped
150g sultanas
150g raisins
130ml brandy
2 teaspoons mixed spice
240g vegetarian suet
150g apples - peeled, cored and chopped
175g brown sugar
juice and zest of 1 orange
150g candied peel
50g chopped almonds

Soak the dried fruit in the brandy overnight.
The next day, combine the dried fruit and brandy with the remainder of the ingredients and mix well until blended.
Transfer the mixture into sterilised jars and seal immediately. Store in the fridge or in a cool dark place for up to 6 months or until needed.
