Chocolate Guinness cake

    A lovely moist chocolate cake spiked with Guinness, best served with cream. You could also divide the mixture between two sandwich tins for a layered chocolate Guinness cake; simply adjust the baking time as needed and fill with cream or buttercream.

    Makes: 1 (23cm) cake

    • 250ml Guinness
    • 250g butter
    • 100g plain chocolate, chopped
    • 35g cocoa powder
    • 150g caster sugar
    • 150g light brown sugar
    • 150g natural yoghurt
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 275g plain flour
    • 2 1/2 teaspoons bicarbonate of soda

    1. Preheat oven to 180 C / Gas 4. Grease and line a 23cm (9 in) cake tin.
    2. Gently heat Guinness and butter together in a saucepan until butter has melted. Take off the heat. Add the chocolate, cocoa powder and sugars and mix until combined.
    3. Mix together the yoghurt, eggs and vanilla, then add into the Guinness mixture. Sift in the flour and bicarb and mix until combined. Tip into prepared tin.
    4. Bake for at least 45 minutes or until skewer comes out clean.
