Chocolate and red wine cake

    A warming, lightly spiced chocolate cake with a boozy twist. The red wine adds a special something to the cake, though most might not be able to put their finger on it!

    Makes: 1 (23cm) cake

    • 250g plain flour
    • 60g cocoa powder
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 225g unsalted butter
    • 300g caster sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 350ml red wine

    1. Preheat oven to 180 C / Gas 4. Grease and line two 23cm (9 in) cake tins.
    2. Sift together flour, cocoa powder, baking powder, salt and spices.
    3. Cream the butter and sugar together, then add the eggs, one at a time. Add vanilla. Mix the flour mixture alternately with the wine. Divide between prepared tins.
    4. Bake for 25 to 30 minutes or until skewer inserted in the centre comes out clean.


    Add chocolate chunks too the cake mixture. Delicious filled with whipped cream, ganache or buttercream.
