About this recipe: This tasty dish contains two servings of wholegrain per person, as well as being low in saturated fat. Wholegrain foods are typically low in fat, as well as being higher in fibre to help maintain a healthy digestive system. Wholegrain foods are also typically digested more slowly, so can help you feel fuller for longer, which means you are less likely to snack in between meals.

Serves: 4 

  • 1 tablespoon rapeseed oil
  • 1 bunch spring onions, chopped
  • 2 teaspoons harissa paste
  • 500g pack minced turkey breast
  • 8 dried apricots, finely chopped
  • 4 wholemeal pitta breads, toasted
  • 50g rocket
  • tzatziki, to serve

  1. Heat the oil in a frying pan and fry the spring onions and harissa paste for 1 to 2 minutes until golden. Using a bowl, stir this into the raw turkey mince with the apricots. Mould into 8 thick sausage shapes and thread onto 8 skewers.
  2. Place under a grill for 15 minutes, turning occasionally until golden and cooked throughout.
  3. Fill the pittas with rocket and top with the koftas. Serve with a dollop of tzatziki.


Try using minced pork instead of turkey or serve as burgers in wholemeal rolls.
