Sausage baked beans casserole

    In this easy casserole dish the sausages are bulked out with plenty of veg. I like to serve this with mashed potatoes.

    Serves: 4 

    • 2 teaspoons olive oil
    • 2 celery sticks, chopped
    • 2 carrots, chopped
    • 1 onion, chopped
    • 100g mushrooms, sliced
    • 1/2 leek, sliced
    • 1 garlic clove, finely sliced
    • 6 cooked sausages, sliced
    • 400g tin chopped tomatoes
    • 1 teaspoon dried oregano
    • 1 tablespoon tomato puree
    • 400g tin baked beans

    1. Heat the olive oil in a casserole and gently fry the celery, carrots, onion, mushrooms, leek, and garlic for a few minutes until they start to soften, stirring. Then add the sausages and cook for a few minutes more.
    2. Add the tomatoes, oregano and tomato puree and simmer for 5 minutes.
    3. Add the beans and simmer for a further 10 minutes until the vegetables are soft and the sausages are fully heated through.


    I sometimes add some cabbage, if I've got a little bit that needs using up.
