    About this recipe: These honey roasted root vegetables are the perfect winter side dish and pair really well with roast chicken or pork.

    Serves: 8 

    • 3 parsnips, peeled and quartered lengthways
    • 4 carrots, peeled and halved lenthways
    • 1 swede, peeled and roughly diced
    • 3 potatoes, peeled and diced
    • 3 tablespoons olive oil
    • salt and pepper, to taste
    • 4 tablespoons runny honey
    • 1 tablespoon chopped fresh parsley

    1. Preheat the oven to 200 C / Gas 6.
    2. Combine all of the ingredients in a bowl and mix well with hands. Spread out over a large baking tray.
    3. Bake in the preheated oven for 40 to 45 minutes until golden brown and caramelised. Remove from the oven and serve immediately.
