Posh gazpacho

    This is my recipe for posh gazpacho. I call it 'posh gazpacho' because I like to serve it in tall and fancy shot glasses as a party starter.

    Serves: 15 

    • 700g ripe tomatoes
    • 1/2 cucumber
    • 2 sticks celery, sliced
    • 1/2 red onion, chopped
    • 2 cloves garlic, minced
    • 3 tablespoons olive oil
    • 1 tablespoon wine vinegar
    • 1 teaspoon Tabasco® sauce
    • 1 dash Worcestershire sauce
    • salt and pepper, to taste
    • flat leaf parsley, to garnish

    1. Combine all of the ingredients, except the parsley, in a large bowl and purée using a hand held liquidiser. Chill for 3 hours in the fridge prior to serving.
    2. Using a funnel, transfer into shot glasses or bowls and serve garnished with parsley.
