Thousand island salad dressing

    This thousand island salad dressing recipe was given to me by an old friend living in South Carolina many years ago. Delicious particularly with salads containing hard boiled eggs or shellfish.

    Serves: 10 

    • 1/2 pickled cucumber, finely chopped
    • 2 tablespoons red onion, minced
    • 1 teaspoon lemon juice
    • 1/2 teaspoon garlic, minced
    • 2 tablespoons ketchup
    • salt and pepper, to taste
    • 200g mayonnaise
    • 2 drops Tabasco® sauce

    1. Combine all of the ingredients in jam jar with a tight fitting lid. Screw on the lid then shake vigorously for 10 seconds until all of the ingredients are well combined. Use or store in the fridge until needed.


    This salad dressing will keep for up to 3 days in the fridge, however shake again to refresh before using.
