This prawn omelette is great for a special occasion like Mother's Day and perfect for a brunch. Use small fresh prawns if possible, but if not previously frozen will work well too. Recipe doubles well for a larger group.
In a bowl, beat together all of the ingredients except the butter and chives.
In a frying pan over a medium heat, melt the butter then pour in the egg mixture. Move the pan around to spread out the egg and allow raw egg to cook on the base. Once the omelette is no longer runny, fold over in half. Serve hot garnished with chopped fresh chives.
