Jam thumbs

    These jam thumbs are delicious and great for when you want to do some baking but don't want to have to get in the car and drive to get ingredients .Every thing here should already be in your pantry .Kids love these but they are great for all ages .They are traditionally made with a sugar cookie base but I find that a shortcrust pastry base works just as well as a low in sugar alternative .

    • 200 grams of plain / all purpose flour
    • 110 grams of unsalted butter
    • A pinch of salt ( optional )
    • 1 teaspoon of white / caster sugar ( optional )
    • 1 pot of jam
    • 100 mls of water


    1. Rub Flour and butter together with fingers until it resembles breadcrumbs ( if you are short on time use a blender )
    2. Mix in salt and sugar if you are using them
    3. Add water a little at a time until it makes a dough
    4. Refrigerate dough for fifteen minutes wrapped in cling film
    5. Roll dough into individual balls making them as even as possible ( or if catering for a party try making half bigger and half smaller )
    6. Press your thumb into the center of each ball
    7. Put into the oven on bake at 200 degrees
    8. Spoon half a teaspoon of jam* into each " cookie "
