Captivating Custard Creams


    MAKES 20 sandwiched BISCUITS. Deliciously moreish :) When baked, these custard creams bear more of a resemblance to a Viennese Whirl than what you normally think of when you hear 'custard cream' (small, hard, rectangular dense pastry) Recipe can be easily scaled up or down. A very quick, simple & tasty treat that look impressively complicated ;-)

    • 350g hard margarine
    • 142g caster sugar
    • 425g plain flour
    • 142g custard powder
    • 150g icing sugar
    • 100g marg
    • 1.5ml vanilla essence


    1. Preheat oven to 180°C / 350°F / Gas Mark 4
    2. Cream marg & sugar
    3. Sieve together custard powder & plain flour
    4. Beat flour mixture into creamed fat & sugar
    5. Roll mix into sausage & slice into 40
    6. Place on baking tray & press down with a fork
    7. Bake for 10-15mins
    8. Allow to firm slightly before transferring to a wire rack to cool
    9. Once cool, sandwich together using buttercream made by combining the Marg, icing sugar & vanilla essence
    10. Congratulate yourself on a job well done by rewarding yourself with a cup of tea and one of your outstanding bakes ;-)


    You can of course substitute butter for the Marg in the buttercream and also, of course, the biscuits.

    These were nice . I put the rolled mix wrapped in cling film in fridge for ten mins before slicing . I also added some custard powder to the buttercream icing along with a bit more vanilla essence . Made about 25.  -  21 Sep 2014
