Corned beef and sweet potato hash

    The first time I created this dish was from using random items in my kitchen to put my own spin on a classic dish! A layer of corned beef, topped with a layer of chill beans with cheese sprinkled on top. Then to top it off a layer of sweet potato mash and smoked dutch cheese.

    • Tin of corned beef 1
    • Half a tin of chilli or normal baked beans
    • Cheddar cheese (grated) 150g
    • Dutch Smoked cheese (grated) 150g
    • Sweet potatoes 2/3
    • Bacon (optional) 4 rashers
    • Milk 1 Tbs
    • Butter 20g


    1. Place a pan of water on the hob and allow to boil.
    2. While the water is heating up peal the sweet potatoes and dice, then add the potatoes to the boiling water and allow to simmer for 20 mins.
    3. while you allow the potatoes to boil get a medium sized oven dish and pre-heat the oven to 180'c.
    4. Take your corned beef and cut it into slices and then layer the bottom of the oven dish.
    5. next layer your bean on top of the corned beef, the beans do not need to be heat as they will be going into the oven.
    6. now take your cheddar cheese and evenly sprinkle the cheese on top of the beans.
    7. when your potatoes are soft take them off the heat and drain the water into the sink, place the potatoes back in the pan after draining and then use a fork to mash the potatoes.
    8. While mashing the potatoes add the butter and milk to the potatoes and mix to make them nice and creamy, the when ready layer the mash on top of the other ingredients in the oven dish.
    9. (Optional) Place the bacon rashers on top of all the other layer in the oven dish.
    10. Now for the final touch grate the dutch cheese (normal cheese if you prefer) and place it evenly on the top and place in the oven for 12/15 mins and then enjoy.
