Corned beef and sweet potato hash

    The first time I created this dish was from using random items in my kitchen to put my own spin on a classic dish. A layer of corned beef, topped with a layer of chill beans with cheese sprinkled on top. Then to top it off a layer of sweet potato mash and smoked Dutch cheese.

    Serves: 6 

    • 2 to 3 sweet potatoes
    • 1 tin (340g) corned beef
    • 1/2 tin (200g) chilli beans or regular baked beans
    • 150g cheddar cheese, grated
    • 20g butter
    • 1 tablespoon milk
    • 4 bacon rashers (optional)
    • 150g Dutch smoked cheese, grated

    1. Place a pan of water on the hob and bring to the boil.
    2. Peel and dice the sweet potatoes and cook them in the simmering water until soft, about 20 minutes.
    3. Preheat the oven to 180 C / Gas 4. Grease a medium sized ovenproof dish.
    4. Slice the corned beef and layer it in the bottom of the dish.
    5. Place your beans on top of the corned beef. Evenly sprinkle the cheddar on top.
    6. Drain the potatoes and place them back in the pan. Mash them, adding butter and milk, until they are a creamy mash.
    7. Layer the mash on top of the cheddar.
    8. If using, place the bacon rashers on top of the sweet potato mash.
    9. Sprinkle with the Dutch cheese and bake in the preheated oven until heated through and bubbly, 12 to 15 minutes.
