    About this recipe: If you love leeks, this leek and potato soup is a must. No frills, just a gorgeously simple soup to warm you from the inside out.

    Serves: 4 

    • 2 tablespoons olive oil
    • 4 large leeks, chopped
    • 1 medium onion, diced
    • 5 medium potatoes, peeled and chopped
    • 900ml boiling water
    • 2 vegetable stock cubes
    • salt and black pepper, to taste

    Prep:10min  ›  Cook:35min  ›  Ready in:45min 

    1. Heat oil gently, add leeks and onion, then cook for 7 to 10 minutes until soft.
    2. Add potatoes, cook for 2 to 3 minutes. Add water and stock cubes, and season well.
    3. Bring to boil, lower heat, simmer for 20 to 30 minutes.
    4. Cool slightly, puree, reheat gently. Serve in warm bowls.

    Tried Dianes hearty veg soup which was lovely and filling so thought I would give this one a go too and see if it was just as nice! Perfect for these winter nights and easy to make a batch and warm up for lunch/dinner as a quick but filling meal. Waiting for your next recipe now!  -  11 Feb 2014


    made this with my mum using a leek from my schools allotment. it was easy to cook and well enjoyed with warm, crusty bread and the second time we made it, we added chicken.  -  20 Jan 2016
