Chocolate fondant meringues

    These meringues have a crispy outer shell with a gooey liquid centre. They only require three ingredients - egg whites, chocolate and sugar. Perfect to give as a gift to have with a nice hot beverage.

    Serves: 12 

    • 4 egg whites
    • 250g caster sugar
    • 100g dark chocolate

    1. In a pot add water about 5cm high and bring to a simmer. Preheat oven to 130 C / Gas 1-2.
    2. In a metal bowl, combine egg whites and sugar. Place the bowl over your pot of simmering water, stirring constantly with a wooden spoon. Remove from heat when the mix is too hot to touch.
    3. Take off the heat and beat with an electric mixer until firm and it has doubled in volume.
    4. Melt the chocolate (best in a hot water bath) and fold into the meringue, leave it a bit uneven for a more marbled effect.
    5. Using 2 teaspoons, place small balls of the mix on a baking tray lined with baking paper. Bake until set, about 35 minutes.
