Juicy barbecued prawns with lemon and garlic butter

    One of the biggest life lessons that kids can learn each summer is that Ireland and BBQ conditions don’t always go hand in hand. But when we do get the weather for it, there’s nothing better than dining al fresco. Try the recipe below, cooking the prawns on the BBQ and finishing off in a pan.

    • 24 prawns, cleaned and deveined
    • 4 tablespoons Dairygold
    • 2 tablespoons chopped garlic
    • juice of 1/2 lemon

    1. Put the prawns on skewers and grill on barbecue for 3 to 5 minutes.
    2. When the prawns are almost done, melt Dairygold in pan; add chopped garlic and lemon juice. (It's best to divide and conquer for this rather than running from BBQ to pan and back).
    3. Sauté barbecued prawns in Dairygold and lemon sauce for a minute.
