Sweet beetroot

    The boring beetroot is no more. To bring out the best of this deliciously sweet and versatile veg, all you need is a little time, a little thyme and one last special ingredient beginning with 'D'.

    Serves: 1 

    • 1 whole beetroot
    • salt, to taste
    • 1 sprig fresh thyme
    • 1 tablespoon Dairygold

    1. Bring a large saucepan of salted water to the boil, then add your beetroot (which shouldn't be peeled at this stage). Cook for 20 to 25 minutes, or until tender.
    2. When ready, allow the boiled beetroot to cool slightly, then peel off the skin. By now, the skin should come away easily. Once peeled, chop into small chunks.
    3. Next, melt a scoop of Dairygold in a frying pan. Add the thyme and cook for a minute, before adding the beetroot.
    4. Toss the beetroot in the pan until it's coated in the melted Dairygold, for flavour you can't beat!
