Quick and easy vegetable soup

    This vegetable soup takes only 30 minutes to get from stove to stomach and always goes down well with the family! This recipe is so easy to remember - one of everything! If you would like, you could just use two carrots instead of the carrot and parsnip.

    Serves: 4 

    • 1 tablespoon vegetable oil
    • 1 medium onion, roughly diced
    • 1 stick celery, roughly diced
    • 1 medium carrot, roughly diced
    • 1 medium parsnip, roughly diced
    • 1 medium potato, roughly diced
    • 1 small green pepper, roughly diced
    • 1 litre vegetable stock
    • salt and pepper, to taste

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Heat the oil in a large saucepan over medium high heat. Add the veg, salt and pepper and fry while stirring for 2 minutes. Add the stock and bring to the boil.
    2. Reduce the heat to low and simmer for 20 minutes or until all the veg is soft.
    3. Turn off the heat and blend until smooth with a stick blender. Alternatively, blend it in batches in a regular blender.
    4. Heat again and serve. Yum!


    You can always refrigerate any leftovers. Just reheat in a saucepan!
