Simple lime cheesecake

    This is a recipe for a simple lime cheesecake. The lime flavour is not too strong and this is an invigorating dessert to serve after a rich meal.

    Serves: 8 

    • For the base
    • 250g digestive biscuits, finely crushed
    • 1 teaspoon lime zest
    • 1 tablespoon lime juice
    • 75g melted butter
    • For the filling
    • 2 teaspoons powdered gelatine
    • 2 tablespoons cold water
    • 250g cream cheese
    • 250ml soured cream
    • 125g caster sugar
    • 2 tablespoons lime juice
    • 1 tablespoon lime zest

    1. Line a 20cm springform cake tin with baking parchment.
    2. For the base:

    3. In a bowl, combine the crushed biscuit crumbs, lime zest, lime juice and butter. Press the mixture into the base of the prepared tin. Put in the fridge to allow to harden.
    4. For the filling:

    5. In a bowl, combine the gelatine and cold water. Set aside for 10 minutes for it to swell.
    6. Beat the cream cheese until soft then add the soured cream, sugar, remaining lime juice and lime zest. Beat the mixture until the sugar has dissolved.
    7. Melt the gelatine in a little water over a very low heat. Once melted, add to the cheese mixture and stir well. Pour the filling over the prepared biscuit base.
    8. Chill in the fridge for 8 hours or until set.

    Very easy to follow. This was my 1st attempt at cheesecake ad went down very well at a family get together.  -  09 Jan 2016
