No bake creamy lime cheesecake

    This creamy no bake lime cheesecake is an absolute favourite in our household and often requested for parties and picnics.

    Makes: 1 creamy lime cheesecake

    • 250g digestive biscuits, crushed
    • 120g unsalted butter, melted
    • 15g powdered gelatine
    • 3 tablespoons cold water
    • zest and juice of 3 limes
    • 3 eggs, separated
    • 85g caster sugar
    • 225g cream cheese, softened
    • 150ml double cream

    1. Mix crushed biscuits and butter together; spread over and press down into an 18cm loose bottomed cake tin.
    2. Dissolve the gelatine in 3 tablespoons of warm water and 3 tablespoons lime juice. Soak for 10 minutes and allow to swell. Melt over a low heat.
    3. Beat egg yolks with sugar in a large bowl and add the lime zest. Add dissolved gelatine and cream cheese and beat until a smooth consistency is obtained. Add cream and mix well.
    4. Beat egg whites until stiff and fold into the cream cheese mixture. Turn onto biscuit crumb base; transfer to fridge to set for 8 hours.
