Strawberry goat's cheese cheesecake

    A strawberry cheesecake is made with soft goat's cheese and goat's yoghurt for a refreshing change from the norm. Delicious, rich and refreshing.

    Makes: 1 strawberry goat's cheesecake

    • For the cheesecake
    • 1 egg yolk
    • zest and juice of 1 orange
    • 125g strawberry goat's yoghurt
    • 25g self-raising flour
    • 75g caster sugar
    • 150g soft goat's cheese
    • 2 egg whites
    • 1 packet digestive biscuits
    • 75g goat's butter
    • For the strawberry sauce
    • 75g strawberry jam
    • 225g plain goat's yoghurt

      For the cheesecake:

    1. Preheat the oven to 170 C / Gas 3. Grease a 20cm springform cake tin.
    2. In a mixing bowl, combine the egg yolk, orange zest and juice, strawberry yoghurt, flour and sugar. Mix well then fold in the goat's cheese.
    3. In a clean mixing bowl, whisk the egg whites until stiff peaks form.
    4. Stir 1 tablespoon of the whisked egg white into the cheese mixture, then gently fold in the remaining egg white.
    5. Combine the biscuits and butter and press into the prepared springform tin with the back of a spoon. Spoon the cream cheese mixture on top and smooth the top.
    6. Bake for 35 to 40 minutes in the preheated oven until firm in the centre and lightly browned on top. Remove from the oven and allow to cool slowly and fully for 3 hours.
    7. For the strawberry sauce:

    8. To make the strawberry sauce, melt the jam in a pan, stirring to make sure it doesn’t burn. Remove from the heat and stir into the yoghurt.
