About this recipe: A simple, delicious white chocolate fudge with a milk chocolate layer in the centre. You could get creative and add more fillings in the centre, such as chopped walnuts, dried cranberries, or a mixture.

Makes: 3 to 4 dozen pieces

  • 600g good quality white chocolate
  • 400ml sweetened condensed milk
  • 1 tablespoon vanilla extract
  • 1/2 tablespoon lemon juice
  • 1 pinch salt
  • 175g milk chocolate
  • 40g unsalted butter
  • 50g melted plain or milk chocolate, to decorate

  1. Line a 20cm (8 in) square tin with foil.
  2. Melt the white chocolate with the condensed milk in a pan over a low heat, stirring frequently. Remove from the heat and stir in the vanilla, lemon juice and salt. Spread half the mixture in the tin. Chill in the fridge for 15 minutes.
  3. Melt the 175g milk chocolate with the butter in a pan over a low heat, stirring until smooth. Remove from the heat, cool slightly, then pour over the chilled white chocolate layer and chill for another 15 minutes.
  4. Gently reheat the remaining white chocolate and condensed milk mixture until melted and pour it over the set milk chocolate layer. Smooth the top, then chill in the fridge for 2 to 3 hours, until set.
  5. Using the foil to lift it, remove the fudge from the tin and turn on to a chopping board. Remove the foil and using a sharp knife, cut into squares. To decorate, drizzle with melted chocolate.
