Low fat pork and baked bean chilli

    Hearty alternative to regular chilli. Goes great stuffed into wholemeal pitta bread with some salad. Easy recipe.

    Ingredients
    Serves: 4 

    • 500g extra lean pork mince
    • 1 clove garlic, chopped
    • 1 onion, chopped
    • 1 red pepper, chopped
    • chopped fresh chillies, to taste
    • 1 (400g) tin chopped tomatoes
    • 2 (415g) tins baked beans
    • 250ml vegetable stock
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon chilli powder

    Method
    Prep:10min  ›  Cook:35min  ›  Ready in:45min 

    1. Brown the mince in a large pan, then add the garlic, onions, red pepper and half your chillies. Cook for further 2 minutes.
    2. Add the tomatoes, beans an stock. Stir well, then add the spices and remaining chillies.
    3. Simmer your chilli on a low heat for about 30 minutes, stirring occasionally. The liquid should reduce and your chilli should become thick.

    Tip

    I sometimes add mixed dried herbs and mushrooms to this recipe.
