Mix all dry ingredients together in a large bowl, and all wet ingredients together in a jug. Beat the wet ingredients well, then add to the dry ingredients. Mix and add milk if needed, a spoonful at a time, to achieve a smooth batter.
Lightly grease a griddle or frying pan and place over medium high heat. Once hot, place spoonfuls of batter onto the pan and cook the pancakes till the bottom is golden brown and the edges are starting to go dry; flip and cook for another minute till the other side is golden.
You can make the pancake batter ahead of time and let it sit in the fridge till you are ready to make the pancakes.
