Fudgy banana muffins

    Wedges of fudge melted in muffins giving them a moist and tasty texture. Enjoy them while warm topped with honey.

    Makes: 12 muffins

    • 250g self raising flour
    • 1 teaspoon baking powder
    • 100g fudge
    • 100g soft light brown sugar
    • 75g butter
    • 125ml milk
    • 1 teaspoon vanilla extract
    • 2 medium ripe bananas
    • 2 medium eggs
    • 2 tablespoons clear honey

    1. Heat the oven at 190 C / Gas 5. Put a paper muffin case into each space in a muffin tray. Sift the flour and baking powder in a mixing bowl.
    2. Place the fudge on a chopping board and cut into substantial chunks. Add your sugar and fudge to the bowl with the flour and stir. Make a hollow in the centre of the mixture.
    3. Melt the butter, then add the milk and vanilla.
    4. Peel the bananas and mash them in a bowl with a fork until fairly smooth. Beat the eggs in another small bowl.
    5. Add the banana and egg to the wet mixture, and stir well. Then pour the mixture into the hollow in your mixing bowl.
    6. Stir all with a wooden spoon. The mixture should look lumpy. Now spoon it into the paper cases.
    7. Bake for 20 minutes. Leave in tray for 5 minutes, then brush the tops with honey then move them to cool on a wire rack.
