Helen's Winter Warmer Bacon and Bean Soup


    A wonderful filling, flavoursome soup. Perfect for using up leftover veg. Great on its own as a warming lunch or in a smaller portion as a starter.

    • 8 rashers streaky bacon (chopped)
    • 2 leeks (halved and sliced)
    • 4 carrots (thinly sliced)
    • Any other veg such as small florets of cauliflower, shredded cabbage, etc.
    • 400g tin mixed beans
    • 1 litre chicken stock
    • 2 tbsp (or more to taste) tomato puree
    • 50-80g small pasta shapes


    1. Fry the bacon in a large non-stick pan (it will cook in its own fat) until crispy.
    2. Add the sliced carrots and cook for about 5 minutes until beginning to soften.
    3. Add the leeks and any other vegetables until softened but still firm.
    4. Add the beans, stock, tomato puree and pasta. Simmer until the pasta is soft, but not soggy.
    5. Serve with a warm crusty roll.


    Vary the veg according to season or what you have that needs using up. Experiment with different beans too.

    Nice idea! I added a red onion, red pepper and sweet potato. The beans I used were Cannellini. I used 200g chopped bacon (from Lidl). I omitted the pasta and added 200ml less stock. I also added a teaspoon of chilli flakes. Delish!!  -  15 Oct 2017
