Cinnamon and ginger biscuits

    This biscuit recipe is great for all ages and very easy to make. Lovely as a mid afternoon snack or morning coffee treat.

    Ingredients
    Serves: 8 

    • 120g plain flour
    • 120g butter
    • 60g caster sugar
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cinnamon

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat the oven to 150 C / Gas 2.
    2. Mix the flour and the butter together until the mixture resembles fine breadcrumbs.
    3. Add the sugar, ginger and the cinnamon and mix until a stiff dough forms.
    4. Sprinkle some flour onto a board and roll out the dough. Cut the dough into shapes then place on a greaseproof tray.
    5. Bake for 10 to 20 minutes in the preheated oven until golden brown. Remove from the oven and allow to cool before serving.

    Tip

    If the dough is too dry add more butter (or a splash of milk) to bind. If the mixture becomes too wet add some more flour.
