    About this recipe: Such an easy pancake recipe that doesn't need to be chilled or left to rest, just mix together and cook it! The toffee sauce is optional, but is so so delicious and creamy, and yummy with the pancakes.

    Ingredients
    Makes: 10 pancakes

    • 240g plain four
    • 2 eggs
    • 1 pint milk
    • 1 pinch salt
    • 1 tablespooon caster sugar
    • Toffee sauce
    • 50g dark brown sugar
    • 75g light brown sugar
    • 120g butter
    • 200ml double cream

    Method

    1. To make the toffee sauce: Add both of the sugars and the butter to a non stick saucepan.
    2. Heat over a very low heat stirring constantly.
    3. Heat until all of the butter has melted, and the sugar has dissolved.
    4. Add 150ml of the cream and stir in.
    5. Bring to the boil, and when it starts bubbling cook for another 1 minute to allow to go thick.
    6. Leave to cool for a couple of minutes, and stir in the rest of the cream.
    7. To make the pancakes, add the flour, a pinch of salt and the sugar to a bowl.
    8. Add in the milk and eggs to the flour.
    9. Using a whisk beat the mixture until there are no lumps left in the mix, this should only take a minute.
    10. Add a good amount of oil to a frying pan, and rotate the pan around to coat it all with the oil. You then want to pour out the oil in to a little bowl - you can use the oil for the next pancake!
    11. Using a ladle, or a cup, pour some mix in to the middle of the pan.
    12. As soon as the batter hits the pan, rotate it until the whole of the pan is coated. If it doesn't coat the whole pan then add a little more batter.
    13. Cook for around 2 minutes until the side down is golden brown. Using a spatula, make sure that the pancake is cooked, and not stuck on the pan. Flip the pancake.
    14. Cook for another 1 minute until the side down is golden brown.
    15. Drizzle with toffee sauce and serve!
